My friend sent me a package from charleston! She's a foody so of course she sent me some grits ! She sent some recipes, but I had to make one of my favorite things: grits and greens.
Flamingoes oogling over the finished product, which to many may look really gross.
Recipe:
1Cook an onion in oil until golden (5 min or 30 min depending on how much time u have)
2Add about a T of minced garlic
3Turn heat to high, add 1 large bunch chopped greens (mustard, collard, kale) cook until wilted, set aside
4 make grits by boiling 2.5 cups water, adding 1 cup grits and wisking until it's like pudding
5 stir in a cup or so of salsa
6 stir grits into skillet with onions
Add some cheese as desired
Bake at 350 until set
Or, if you don't have time, bake at 350 until its good enough. This pan was probably in the oven 5 min and it was soupy enough that Anna called it soup.
Both girls ate it. I like it. Rich actually doesn't like it but he can deal.
